Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Sauté Vegetables: Heat the olive oil in a skillet over medium heat. Add the diced red onion, red bell pepper, and minced jalapeño and sauté until the vegetables are soft and fragrant, about 5-7 minutes.
- Mix Ingredients: In a large mixing bowl, combine the sautéed vegetables, dry rice, shredded cooked chicken, rinsed black beans, frozen corn kernels, chicken broth, tomato paste, chili powder, garlic powder, cumin, oregano, and sea salt. Stir thoroughly to integrate all ingredients evenly.
- Prepare Baking Dish: Lightly grease a 9×13 inch baking dish. Pour the mixed casserole ingredients into the dish and spread them out evenly. If you prefer, sprinkle shredded cheese on top for added flavor and creaminess.
- Bake Covered: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. This will cook the rice and meld the flavors.
