Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts (or thighs for extra flavor)
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Stuffing Mixture
- 1 box (6 oz) stuffing mix (or homemade stuffing, if preferred)
- 1 cup chicken broth
- 1/2 cup sour cream (optional for creamier texture)
Other Ingredients
- 1 can (10.5 oz) cream of chicken soup (or mushroom soup for a twist)
- 1/2 cup shredded cheddar cheese (optional)
- 1 tablespoon butter (for greasing the casserole dish)
- Fresh parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the perfect temperature for baking the casserole.
- Season and Optional Sear Chicken: Season the chicken breasts evenly with salt, pepper, garlic powder, and onion powder. For enhanced flavor and a golden exterior, optionally pan-sear the chicken in a skillet over medium heat for 2-3 minutes per side.
- Prepare Stuffing Mixture: In a large bowl, combine the stuffing mix, chicken broth, and sour cream if using. Stir thoroughly to moisten the stuffing evenly and set aside.
- Grease Casserole Dish: Use butter or non-stick spray to grease a 9×13-inch casserole dish to prevent sticking.
- Assemble the Casserole: Place the seasoned chicken breasts at the bottom of the casserole dish. Evenly spread the prepared stuffing mixture on top of the chicken.
- Add Soup and Cheese: Pour the cream of chicken soup over the stuffing layer, spreading it out evenly. If desired, sprinkle shredded cheddar cheese on top for a rich, cheesy finish.
- Bake Covered: Cover the casserole with aluminum foil and bake in the preheated oven for 25-30 minutes.
- Finish Baking Uncovered: Remove the foil and continue baking for an additional 10-15 minutes until the chicken reaches an internal temperature of 165°F and the stuffing is golden brown.
- Garnish and Serve: Optionally garnish with fresh parsley and serve hot, ideally with roasted vegetables or a side salad for a complete meal.
Notes
- Optional pan-searing the chicken adds flavor but can be skipped to save time.
- Using chicken thighs instead of breasts will result in a moister, slightly richer dish.
- Substitute cream of mushroom soup for a different flavor profile.
- Sour cream adds creaminess but can be omitted for a lighter casserole.
- Ensure chicken is cooked to 165°F internal temperature for food safety.
- Leftovers can be refrigerated for up to 3 days and reheated thoroughly before serving.
