Instructions
- Heat the oil: Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat to prepare for cooking the chicken.
- Cook the chicken: Add the thinly sliced chicken breasts to the hot skillet. Cook for 5-7 minutes until browned and cooked through. Remove the chicken and set it aside to keep warm.
- Sauté aromatics: In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic and grated ginger for 1-2 minutes until fragrant and aromatic.

- Prepare the sauce: In a small bowl, whisk together the low-sodium soy sauce, honey, rice vinegar, and cornstarch if using. Pour this sauce mixture over the broccoli and stir well to coat evenly.
- Combine chicken and broccoli: Return the cooked chicken to the skillet. Toss everything together and cook for an additional 2-3 minutes, allowing the sauce to thicken and flavors to meld.
