Instructions
- Prepare cheesecake filling: In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Mix thoroughly until the mixture is smooth and creamy.
- Add cherry pie filling: Gently fold the cherry pie filling into the cream cheese mixture, taking care not to break up the cherries too much.
- Assemble egg rolls: Lay one egg roll wrapper flat on a clean surface. Place about 2 tablespoons of the cherry cheesecake filling in the center.
- Seal the egg rolls: Moisten the edges of the wrapper with water to help seal. Roll the wrapper tightly around the filling, folding in the sides to enclose the mixture completely.
- Heat oil for frying: Pour oil into a frying pan to a depth of about 2 inches and heat to 350°F (175°C).
