Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and prepare a large baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
- Prepare Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, salt, pepper, and Italian seasoning until they are thoroughly coated with the seasoning.
- Add Parmesan: Sprinkle the grated Parmesan cheese over the seasoned potatoes and toss again to distribute the cheese evenly among the potatoes.
- Arrange on Baking Sheet: Spread the potatoes cut-side down in a single layer on the prepared baking sheet, ensuring they are not overcrowded for maximum crispiness.
- Roast Potatoes: Place the baking sheet in the oven and roast for 25 to 30 minutes, or until the potatoes are golden brown and crispy on the bottom.
- Add Mozzarella & Finish Roasting: Remove the potatoes from the oven and evenly sprinkle shredded mozzarella cheese over them. Return the baking sheet to the oven and roast for an additional 5 to 7 minutes, or until the cheese has melted and is bubbly.
