  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and prepare a large baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
  2. Prepare Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, salt, pepper, and Italian seasoning until they are thoroughly coated with the seasoning.
  3. Add Parmesan: Sprinkle the grated Parmesan cheese over the seasoned potatoes and toss again to distribute the cheese evenly among the potatoes.
  4. Arrange on Baking Sheet: Spread the potatoes cut-side down in a single layer on the prepared baking sheet, ensuring they are not overcrowded for maximum crispiness.
