Ingredients
Scale
Vegetable Filling
- 1 cup mixed vegetables (carrots, bell peppers, spinach), finely chopped
- 1 cup shredded cheese (cheddar, mozzarella blend)
- 1/2 cup cream cheese, softened
- Salt to taste
- Pepper to taste
Wrapping and Baking
- 1 package spring roll wrappers
- 1 tablespoon olive oil (for brushing)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature for baking the rolls evenly.
- Prepare Filling: In a mixing bowl, combine the finely chopped mixed vegetables, shredded cheddar and mozzarella cheese, softened cream cheese, salt, and pepper. Mix well until thoroughly combined to create a flavorful filling.
- Assemble Rolls: Lay one spring roll wrapper flat on a clean surface. Spoon a generous amount of the vegetable and cheese mixture onto one edge of the wrapper, spreading it evenly but keeping it compact.
- Fold and Roll: Fold the sides of the wrapper over the filling to enclose the mixture, then roll tightly toward the opposite edge to form a compact roll, ensuring no filling escapes during baking.
- Brush with Olive Oil: Using a pastry brush, lightly brush the outside of each spring roll with olive oil to help them crisp up and attain a golden color during baking.
- Arrange on Baking Sheet: Place the prepared rolls seam-side down on a baking sheet lined with parchment paper or a lightly greased surface to prevent sticking.
- Bake: Bake the rolls in the preheated oven for 20-25 minutes or until they turn golden brown and crisp on the outside.
- Cool and Serve: Remove the rolls from the oven and allow them to cool slightly for a few minutes before serving to enhance their texture and flavor.
Notes
- You can substitute mixed vegetables with your favorites or seasonal vegetables as desired.
- For extra crispiness, flip the rolls halfway through baking.
- Serve with a dipping sauce such as sweet chili, ranch, or marinara for added flavor.
- These rolls can be prepared ahead of time and baked fresh when needed.
- Use gluten-free spring roll wrappers to make this recipe gluten-free.
