Instructions
- Prepare Cinnamon Sugar: Combine granulated sugar and ground cinnamon in a small bowl and whisk thoroughly until well mixed.
- Make Cheesecake Filling: In a stand mixer fitted with a paddle attachment, blend softened cream cheese, granulated sugar, lemon juice, vanilla extract, and sea salt on high speed for 1–2 minutes, scraping down the sides as needed, until smooth and creamy.
- Assemble Egg Rolls: Place an egg roll wrapper in diamond orientation on a flat surface. Spoon about 30 ml of cheesecake filling into the center. Fold the bottom corner over the filling, then fold the side corners toward the center forming an envelope shape. Moisten the top corner with water and roll tightly to seal. Repeat with remaining wrappers and filling.
- Heat Oil: Pour vegetable oil into a large stockpot to a depth of approximately 5 cm. Heat over medium heat until it reaches 190°C.
- Fry Egg Rolls: Carefully add four assembled egg rolls to the hot oil. Fry for about 2 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Repeat with remaining egg rolls.
- Coat with Cinnamon Sugar: While still warm, roll each fried egg roll in the prepared cinnamon sugar mixture until evenly coated.
- Serve: Serve immediately with optional caramel sauce, chocolate sauce, chopped strawberries, or a dusting of powdered sugar as desired.
