Instructions
- Prepare cinnamon sugar: In a small bowl, combine granulated sugar and ground cinnamon, whisking thoroughly until well mixed to create the cinnamon sugar coating.
- Make the cheesecake filling: In the bowl of a stand mixer fitted with a paddle attachment, blend softened cream cheese, granulated sugar, lemon juice, vanilla extract, and fine sea salt on high speed for 1–2 minutes. Pause occasionally to scrape down the sides to ensure the mixture is smooth and creamy.
- Assemble the egg rolls: Lay one egg roll wrapper on a work surface in a diamond orientation. Spoon about 30 ml of cheesecake filling onto the center of the wrapper. Fold the bottom corner up over the filling, then fold each side corner in towards the center creating an envelope shape. Moisten the top corner with water and roll snugly to seal. Repeat for all wrappers and filling.
- Heat oil for frying: Pour vegetable oil into a large stockpot to about 5 cm depth and heat over medium heat to 190°C (375°F), ensuring it reaches the ideal frying temperature.
- Fry the egg rolls: Carefully add four egg rolls to the hot oil without overcrowding. Fry for approximately 2 minutes or until golden brown and crispy. Remove with a slotted spoon and place on paper towel-lined plate to drain. Repeat with remaining egg rolls.
- Coat with cinnamon sugar and serve: While still warm, roll each fried egg roll in the prepared cinnamon sugar mixture until evenly coated. Serve immediately with optional caramel sauce, chocolate sauce, chopped strawberries, or a dusting of powdered sugar to enhance the flavors.
