Instructions
- Prepare the Vegetables: Wash and chop all vegetables thoroughly. Break the cauliflower into florets, shred the carrot, clean and chop the leek, and dice the celery to ensure even cooking.
- Cook the Soup: In a large pot, bring 2½ cups of water to a boil. Add the cauliflower, carrot, celery, and leek. Reduce the heat to a simmer and cook for about 20 minutes, or until the vegetables are tender and soft.
- Add Seasonings: Stir in 2 teaspoons of chicken or vegetable bouillon, minced garlic, salt, and pepper to taste. Optionally add fresh herbs like thyme or parsley to enhance the flavor.
- Blend Until Creamy: Use an immersion blender directly in the pot to puree the soup until smooth and creamy. If you prefer using a regular blender, allow the soup to cool slightly and blend in batches carefully.
- Adjust & Serve: If the soup is too thick, add a little more water until you reach your desired consistency. Taste and adjust the seasoning if necessary. Serve hot, garnished with fresh herbs or a drizzle of olive oil for extra richness.
