Description

This hearty and nutritious cauliflower soup is a perfect low-calorie meal designed to aid weight loss. Packed with fresh vegetables and flavored with herbs, garlic, and bouillon, it creates a creamy, comforting soup that supports shedding unwanted pounds while keeping you satisfied.

Ingredients

Scale

Vegetables

  • 1 medium head of cauliflower, broken into florets
  • 1 medium carrot, shredded
  • ¼ cup chopped celery
  • 1 medium leek, cleaned and chopped
  • 1 clove garlic, minced

Liquids & Seasonings

  • 2½ cups water
  • 2 teaspoons chicken or vegetable bouillon
  • Salt and pepper, to taste
  • Fresh herbs (optional, such as thyme or parsley)

Instructions

  1. Prepare the Vegetables: Wash and chop all vegetables thoroughly. Break the cauliflower into florets, shred the carrot, clean and chop the leek, and dice the celery to ensure even cooking.
  2. Cook the Soup: In a large pot, bring 2½ cups of water to a boil. Add the cauliflower, carrot, celery, and leek. Reduce the heat to a simmer and cook for about 20 minutes, or until the vegetables are tender and soft.
  3. Add Seasonings: Stir in 2 teaspoons of chicken or vegetable bouillon, minced garlic, salt, and pepper to taste. Optionally add fresh herbs like thyme or parsley to enhance the flavor.
  4. Blend Until Creamy: Use an immersion blender directly in the pot to puree the soup until smooth and creamy. If you prefer using a regular blender, allow the soup to cool slightly and blend in batches carefully.
  5. Adjust & Serve: If the soup is too thick, add a little more water until you reach your desired consistency. Taste and adjust the seasoning if necessary. Serve hot, garnished with fresh herbs or a drizzle of olive oil for extra richness.

Notes

  • This soup is low in calories and ideal for weight loss plans, especially when combined with a balanced diet and exercise.
  • You can substitute vegetable bouillon to keep the soup vegetarian or vegan friendly.
  • Fresh herbs add brightness and additional nutrients but are optional depending on availability.
  • For a creamier texture without blending, consider adding a splash of low-fat milk or plant-based alternative after cooking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
