Scale
Main Ingredients
- 8 large (burrito-size) flour tortillas
- 1 recipe Cilantro Lime Rice
- 2 (15 ounce) cans pinto beans, drained and warmed
- 4 cups Carnitas
- 3 cups shredded Monterey Jack or Mexican blend cheese
- 2 cups Fresh Tomato Salsa (recipe below) or store-bought pico de gallo or salsa roja
- 1 cup Chipotle Guacamole
- 1 cup sour cream (optional)
- Fresh cilantro for garnish (optional)
For Fresh Tomato Salsa
- 2 to 3 medium tomatoes (Roma or tomatoes on the vine), cut into ¼-inch pieces
- ¼ cup finely chopped red onion
- 2 to 3 jalapeño peppers, finely chopped
- ¼ cup finely chopped fresh cilantro
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh lime juice
- Salt, to taste
Instructions
- Warm the tortillas: Heat a large dry skillet over medium heat. Warm each flour tortilla for 15 to 20 seconds on each side until they become soft and pliable, which makes them easier to roll without tearing.
- Assemble the burritos: Lay each warm tortilla flat and spread about half a cup of prepared cilantro lime rice down the center. Add half a cup of drained and warmed pinto beans, a half cup of tender carnitas, and a generous sprinkle of shredded Monterey Jack or Mexican blend cheese. Top with a spoonful of fresh tomato salsa and chipotle guacamole. If desired, add a dollop of sour cream and sprinkle fresh cilantro over the fillings.
- Roll the burritos: Fold the sides of the tortilla inward, then roll from the bottom upwards, tucking tightly to fully enclose the fillings and create a neat burrito.
- Serve: Optionally slice each burrito in half for easier eating and serve with additional salsa on the side.
- Enjoy: Serve immediately while warm, enjoying the blend of fresh, spicy, creamy, and savory flavors inside every bite.
Notes
- Warm tortillas just until pliable to prevent cracking when rolling.
- Use a slotted spoon for beans to avoid soggy burritos.
- Customize fillings by adding your favorite toppings such as lettuce, jalapeños, or hot sauce.
- For convenience, store-bought pico de gallo or salsa roja can substitute fresh tomato salsa.
- Chill leftover components separately for best freshness if preparing in advance.
