Ingredients
Scale
For the Dough and Base
- 18-20 ounces pizza dough (store-bought or homemade)
- 1/3 cup flour (for dusting)
- Pinch of salt
For the Toppings
- 1 (8 oz) chicken breast, cut into bite-sized cubes (fully cooked)
- 1/2 cup buffalo sauce, divided
- 6-7 slices fresh mozzarella (about 8 oz)
- 1/2 red onion, thinly sliced
- Fresh sliced jalapeños (optional, for extra heat)
For Serving
- Ranch or blue cheese dressing
Instructions
- Preheat the Oven: Preheat your oven to 500°F (260°C) and place a pizza stone inside to heat for 1 hour, ensuring a crisp crust.
- Cook and Sauce the Chicken: In a small skillet over medium heat, cook the cubed chicken with a little oil until golden brown and fully cooked. Remove from heat and toss with 2 tablespoons of buffalo sauce to coat evenly. Set aside.
- Prepare the Dough: On a floured surface, roll out the pizza dough into a 12-inch circle, then sprinkle a pinch of salt over the surface of the dough.
- Transfer the Dough: Lightly dust a pizza peel with flour and carefully transfer the rolled-out dough onto it, ready for topping.
- Add Buffalo Sauce: Spread the remaining buffalo sauce evenly over the dough, leaving a ½ inch border around the edge for the crust.
- Assemble the Pizza: Distribute the buffalo chicken pieces evenly over the sauce, arrange the mozzarella slices on top, then scatter the thinly sliced red onions. Add jalapeño slices if you want extra heat.
- Bake the Pizza: Using the peel, slide the pizza onto the preheated pizza stone. Bake for 10-15 minutes until the crust is golden and cheese is bubbly and melted.
- Serve: Remove the pizza from the oven, let it cool for a few minutes, then slice and serve with ranch or blue cheese dressing for dipping.
Notes
- For a smoky flavor, try using smoked mozzarella or adding a sprinkle of smoked paprika.
- If you don’t have a pizza stone, use a preheated baking sheet as an alternative.
- Cooked chicken can be prepared ahead of time to speed up assembly.
- Adjust the buffalo sauce quantity based on your preferred spice level.
- For an even crispier crust, roll the dough thinner and bake longer if needed.
