Ingredients
Scale
Cauliflower and Batter
- 1 medium head cauliflower, cut into bite-sized florets
- 1/2 cup all-purpose flour
- 1/2 cup water
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2/3 cup buffalo sauce
- 1 tablespoon melted butter (optional)
For Serving
- 4 large tortillas or wraps
- 1 cup shredded lettuce
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumbers
- 1/4 cup crumbled blue cheese or vegan alternative
- 1/2 cup ranch or blue cheese dressing
Instructions
- Prepare the oven and baking sheet: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Make the batter: In a large bowl, whisk together the flour, water, garlic powder, smoked paprika, salt, and black pepper until a smooth batter forms.
- Coat the cauliflower: Add the cauliflower florets to the batter and toss well to coat each piece evenly with the seasoning mixture.
- Bake the cauliflower: Spread the coated cauliflower in a single layer on the prepared baking sheet. Bake for 20 minutes, flipping the pieces halfway through to ensure even cooking and crispiness.
- Mix buffalo sauce: While the cauliflower bakes, combine the buffalo sauce with melted butter in a small bowl if using, to add richness and mellow the heat.
- Toss and finish baking: Remove the cauliflower from the oven and toss thoroughly with the buffalo sauce mixture. Return to the oven for an additional 10 minutes until the florets are crispy and lightly browned.
- Assemble the wraps: Warm the tortillas or wraps to make them pliable. Layer each with shredded lettuce, carrots, cucumbers, buffalo cauliflower, crumbled blue cheese or vegan alternative, and a drizzle of ranch or blue cheese dressing.
- Serve: Roll up the wraps tightly, cut in half if desired, and serve immediately for the best flavor and texture.
Notes
- For a low-carb alternative, skip the tortillas and serve the buffalo cauliflower inside large lettuce leaves or over a green salad.
- To make these wraps vegan, use a plant-based ranch or blue cheese dressing and replace the butter with a vegan butter or omit it entirely.
- You can adjust the amount of buffalo sauce to control the spiciness according to your preference.
- For an extra crunch, add sliced celery or crunchy pickles inside the wrap.
