- Add Powdered Sugar: Gradually add the sifted powdered sugar, about 1 cup at a time, mixing thoroughly after each addition. Continue until the dough becomes thick, pliable, and easy to roll. You may not need to use all 4 cups.
- Form the Buckeye Balls: Roll the dough into 1-inch balls, approximately 1½ tablespoons each, and place them evenly spaced on a parchment-lined baking sheet. Chill the balls in the refrigerator for at least 30 minutes until firm to the touch.
- Melt the Chocolate: In a microwave-safe bowl, combine the chopped semisweet or dark chocolate with coconut oil. Microwave in 20-second intervals, stirring well after each, until the chocolate is completely melted and smooth.
- Dip the Buckeyes: Insert a toothpick into each peanut butter ball. Dip the ball about ¾ of the way into the melted chocolate, leaving the top exposed to mimic the look of a buckeye nut. Allow excess chocolate to drip off before placing back on the parchment-lined tray.
- Chill to Set: Refrigerate the dipped buckeyes for approximately 30 minutes or until the chocolate coating is firm. Optionally, smooth over any toothpick holes gently once set.
- Store and Serve: Enjoy the buckeyes immediately or store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months for longer storage.
