Puff Pastry
- ½ batch rough puff pastry or classic puff pastry (or store-bought, about 1 sheet)

Filling
- 1 cup jam of choice (cranberry, plum, or cherry recommended)
- 4 ounces brie cheese, cut into small cubes or slices
- 4-6 sprigs of fresh rosemary
Egg Wash
- 1 egg, whisked
- 1 teaspoon water or cream
Instructions
- Prepare the work surface. Lightly dust your work surface with all-purpose flour to prevent sticking before handling the puff pastry.
- Roll out the pastry. If using homemade rough puff pastry, roll it out to approximately 1/8 inch thickness. If using store-bought, unfold and roll slightly to smooth any creases.
- Cut the pastry. Cut the pastry into small squares, about 2-3 inches per side, depending on desired bite size.
- Add the filling. Place a small dollop of jam in the center of each pastry square, followed by a piece of brie cheese.
- Add rosemary. Top each with a small leaf or a tiny sprig of fresh rosemary for aroma and flavor.
- Seal the pastry bites. Fold the pastry over if desired or leave square; press the edges gently if folded, or leave open-faced; brush edges with egg wash to help seal and add color.
- Apply egg wash. Brush the tops of each pastry bite with the prepared egg wash for a beautiful golden finish when baked.
- Preheat the oven. Preheat your oven to 400°F (200°C).
- Bake the bites. Arrange the pastry bites on a baking sheet lined with parchment paper, leaving space between them. Bake for approximately 15-20 minutes or until the pastry is puffed and golden brown and the brie is soft.
- Cool and serve. Remove from oven and allow the bites to cool slightly before serving. They are best enjoyed warm.
