These Breakfast Pizza Rolls combine the flavors of a classic pizza with fluffy eggs wrapped in whole wheat tortillas.   • 4 8″ whole wheat tortillas
  • 1 cup pizza sauce
  • 8 Omega-3 eggs
  • 1 cup shredded mozzarella

Instructions

  1. Prepare Tortillas: Spread 3-4 tablespoons of pizza sauce evenly onto each of the whole wheat tortillas and set them aside for later use.
  2. Preheat Skillet: Heat a 10-inch nonstick skillet over medium-low heat and add enough olive oil to lightly coat the bottom of the pan to prevent sticking.
  3. Prepare Egg Mixture: In a bowl, whisk together all 8 eggs, the optional 3 tablespoons of milk for a fluffier texture, and season with salt and pepper to taste.
  4. Cook Egg Layer: Pour one-quarter of the egg mixture into the preheated skillet, spreading it out to form a thin, even omelet. Cook until the eggs are mostly set but still slightly soft on top, ensuring a creamy texture inside.
  5. Add Toppings: Spoon 3-4 tablespoons of pizza sauce evenly over the cooked egg layer, then sprinkle 3-4 tablespoons of shredded mozzarella cheese on top.
  6. Add Tortilla: Place a prepared tortilla, sauce side down, gently on top of the toppings to help it adhere to the egg layer.
  7. Cook and Roll: Carefully swirl the tortilla in the skillet to ensure the egg is fully cooked and the tortilla sticks well. Slide the assembled tortilla onto a plate or cutting board, flip it back into the pan with the tortilla side down, and cook for an additional 30 seconds to seal the roll.
