Description

A quick and savory breakfast fried rice recipe perfect for busy mornings. This dish features cold, day-old rice stir-fried with eggs, mixed vegetables, optional cooked sausage, and flavorful seasonings to create a satisfying, nutritious start to your day.

Ingredients

Scale

Main Ingredients

  • 3 cups cooked rice, cold (preferably day-old)
  • 2 tablespoons olive oil or butter
  • 3 large eggs
  • 1 cup mixed vegetables (peas, carrots, bell peppers, or corn)
  • 1/2 cup cooked chicken or turkey sausage, diced (optional)
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Optional Ingredients

  • Spinach or kale (to taste)
  • Extra eggs (for serving or additional protein)
  • Sesame oil (a few drops for flavor enhancement)

Instructions

  1. Scramble the Eggs: Heat a large skillet over medium heat with a small amount of oil or butter. Crack the eggs into the skillet and scramble gently until just set. Remove the scrambled eggs from the skillet and set aside to keep warm.
  2. Cook the Vegetables and Sausage: In the same skillet, add more oil if necessary. Add the mixed vegetables and sauté for 2 to 3 minutes until they become slightly tender. If using cooked sausage, add it now and cook until warmed through.
  3. Fry the Rice: Add the cold rice to the skillet. Spread it out evenly and allow it to cook undisturbed for about 1 minute to develop a light crisp texture. Then stir and continue cooking for an additional 3 to 4 minutes to heat through evenly.
  4. Add Seasonings and Eggs: Stir in the soy sauce, garlic powder, and black pepper thoroughly. Return the scrambled eggs to the pan and gently fold everything together to combine.
  5. Finish and Serve: Mix in the sliced green onions and cook for another minute. Taste and adjust seasoning if necessary. Serve the fried rice hot, optionally garnished with spinach or kale and a drizzle of sesame oil for added flavor.

Notes

  • Using day-old rice is best to prevent soggy texture and ensure crispiness.
  • You can customize the vegetables based on what you have on hand.
  • Optional protein such as cooked sausage adds heartiness to the dish.
  • Sesame oil adds a lovely nutty flavor—use sparingly.
  • For a vegetarian version, omit the sausage or substitute with tofu.
