Ingredients
Scale
Blueberry Topping
- 1/2 cup frozen blueberries
- 2 tablespoons granulated sugar
- 1 tablespoon freshly squeezed lemon juice
- 2½ teaspoons cornstarch
Fudge Base
- 3 cups good quality white baking chips
- 1 cup sweetened condensed milk
Instructions
- Prepare the baking dish: Line an 8×8 inch baking dish with parchment paper, leaving an overhang on two sides to easily lift the fudge out once set.
- Cook blueberry mixture: In a medium saucepan over medium heat, combine the frozen blueberries, granulated sugar, lemon juice, and cornstarch. Whisk continuously and simmer for about 10 minutes until the mixture thickens.
- Strain and chill blueberry topping: Pour the blueberry mixture through a fine-mesh strainer into a bowl, pressing the berries to extract juice while discarding the hulls. Cover and refrigerate the blueberry topping for 1 hour to chill.
- Melt fudge base: In a microwave-safe bowl, combine white baking chips and sweetened condensed milk. Microwave initially for 1 minute, then continue heating in 30-second intervals, stirring in between until the mixture is fully melted and smooth.
- Combine fudge and blueberry topping: Gently fold the chilled blueberry topping into the melted fudge mixture to create an attractive marbled effect without fully blending.
- Set fudge: Pour the combined fudge mixture into the prepared baking dish and smooth the surface. Cover and refrigerate for 3 to 4 hours until the fudge is firm and set.
- Serve: Once set, lift the fudge out using the parchment paper overhang. Cut into 36 pieces and store refrigerated until ready to serve.
Notes
- Using parchment paper with an overhang helps in easily removing the fudge from the pan without breaking.
- Ensure the blueberry mixture is well chilled before folding into the fudge for distinct marbling.
- If you want a smoother blueberry topping, press the mixture thoroughly through the strainer to remove as much pulp as possible.
- Store fudge in an airtight container in the refrigerator to keep it fresh.
- For a different flavor twist, try adding a teaspoon of vanilla extract to the fudge base before melting.
