Description

This Blueberry Fudge recipe combines creamy white chocolate and sweetened condensed milk with a tangy, fresh blueberry topping for a deliciously marbled treat. Chilled to set, this easy no-bake fudge is perfect for parties or anytime you want a fruity twist on classic fudge.

Blueberry Topping

  • 1/2 cup frozen blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon freshly squeezed lemon juice
  • 2½ teaspoons cornstarch

Fudge Base

  • 3 cups good quality white baking chips
  • 1 cup sweetened condensed milk


Instructions

  1. Prepare the baking dish: Line an 8×8 inch baking dish with parchment paper, leaving an overhang on two sides to easily lift the fudge out once set.
  2. Cook blueberry mixture: In a medium saucepan over medium heat, combine the frozen blueberries, granulated sugar, lemon juice, and cornstarch. Whisk continuously and simmer for about 10 minutes until the mixture thickens.
  3. Strain and chill blueberry topping: Pour the blueberry mixture through a fine-mesh strainer into a bowl, pressing the berries to extract juice while discarding the hulls. Cover and refrigerate the blueberry topping for 1 hour to chill.
  4. Melt fudge base: In a microwave-safe bowl, combine white baking chips and sweetened condensed milk. Microwave initially for 1 minute, then continue heating in 30-second intervals, stirring in between until the mixture is fully melted and smooth.
  5. Combine fudge and blueberry topping: Gently fold the chilled blueberry topping into the melted fudge mixture to create an attractive marbled effect without fully blending.
  6. Set fudge: Pour the combined fudge mixture into the prepared baking dish and smooth the surface. Cover and refrigerate for 3 to 4 hours until the fudge is firm and set.
  7. Serve: Once set, lift the fudge out using the parchment paper overhang. Cut into 36 pieces and store refrigerated until ready to serve.
