  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup milk (dairy or non-dairy)
  • 2 large eggs
  • ½ cup unsweetened applesauce or mashed banana
  • â…“ cup maple syrup or honey
  • 1 teaspoon vanilla extract

Optional Mix-ins

  • ½ cup chocolate chips
  • ½ cup berries
  • ½ cup chopped nuts
  • ½ cup dried fruit

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease it with nonstick spray to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, ground cinnamon, and salt, stirring them together evenly.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the milk, eggs, unsweetened applesauce or mashed banana, maple syrup or honey, and vanilla extract until well combined.
  4. Combine Wet and Dry: Pour the wet ingredient mixture into the dry ingredients and stir until the batter is fully combined without overmixing.
  5. Add Mix-ins: Fold in any optional mix-ins such as chocolate chips, berries, nuts, or dried fruit for added flavor and texture.
  6. Fill Muffin Cups: Evenly divide the batter among the 12 muffin cups in your prepared tin, filling each about three-quarters full.
  7. Bake: Bake in the preheated oven for 22 to 25 minutes, or until the tops are golden brown and the cups are set.
  8. Cool and Serve: Allow the oatmeal cups to cool in the pan for 5 minutes, then transfer them to a wire rack. Serve warm or at room temperature as desired.
