Description

These Baked Apple Pie Rice Paper Rolls are a delightful twist on traditional apple pie, wrapped in crispy rice paper and baked to golden perfection. Filled with cinnamon-spiced apples and sweetened naturally, these rolls offer a crispy, warm, and comforting dessert that’s perfect for a healthier treat or an impressive party snack.

Ingredients

Scale

For the Rolls

  • 6 rice paper wrappers

For the Apple Filling

  • 2 medium apples, peeled, cored, and finely diced
  • 1 tablespoon coconut oil or butter
  • 2 tablespoons brown sugar or maple syrup
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg (optional)
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch (optional, helps thicken the filling)

For Baking

  • Cooking spray or additional oil for brushing

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Prepare Apple Filling: In a skillet over medium heat, melt the coconut oil or butter. Add the diced apples, brown sugar or maple syrup, cinnamon, nutmeg (if using), and lemon juice. Cook for 5 to 7 minutes, stirring occasionally, until the apples are soft and coated in a syrupy mixture. If using cornstarch, stir it in now and cook for an additional minute to thicken the filling. Remove the mixture from heat and let it cool slightly.
  3. Soften Rice Paper Wrappers: Fill a shallow dish with warm water. Submerge one rice paper wrapper for about 10 to 15 seconds until it’s pliable but still firm enough to roll without tearing. Lay the softened wrapper flat on a clean surface.
  4. Fill and Roll: Spoon 2 to 3 tablespoons of the cooled apple filling onto the bottom third of the wrapper. Fold the sides inward to encase the filling, then roll it up tightly from the bottom, similar to rolling a spring roll, ensuring no gaps remain.
  5. Arrange on Baking Sheet: Place each assembled roll seam-side down on the prepared baking sheet. Repeat the process with the remaining wrappers and filling to make six rolls in total.
  6. Brush with Oil: Lightly brush or spray the surface of each roll with oil. This step helps the rice paper crisp up beautifully during baking.
  7. Bake Rolls: Bake the rolls in the preheated oven for 20 to 25 minutes, turning them over halfway through baking to ensure that both sides become golden and crisp.
  8. Cool and Serve: Once baked, remove the rolls from the oven and allow them to cool slightly before serving. Enjoy them as they are, or enhance with a dusting of powdered sugar or a side of caramel sauce or vanilla yogurt for dipping.

Notes

  • For a vegan option, use coconut oil and maple syrup instead of butter and brown sugar.
  • Adjust the sweetness of the filling to your taste by varying the amount of brown sugar or maple syrup.
  • If you want a thicker apple filling, cornstarch is recommended, but you can omit it if preferred.
  • Rice paper wrappers can be delicate; ensure not to soak for too long to avoid tearing.
  • These rolls can be served warm or at room temperature and make a great portable dessert or snack.
