Description

These Avocado Cacao Truffles are a deliciously creamy and healthy treat made without refined sugar. Using ripe avocado as a base, combined with rich dark chocolate and unsweetened cacao powder, these truffles offer a naturally sweet and fudgy texture. Sweetened with pure maple syrup and enhanced with vanilla and a pinch of sea salt, they’re perfect for a guilt-free dessert or snack. Finished with a dusting of cacao or a glossy chocolate coating, these no-bake truffles are simple to make, gluten-free, and packed with healthy fats.

Ingredients

Scale

Truffle Base

  • 1 ripe avocado (soft but not brown)
  • 1/4 cup unsweetened cacao powder (plus extra for dusting)
  • 1/4 cup melted dark chocolate (70% or higher, no refined sugar)
  • 3 tablespoons maple syrup (or to taste)
  • 1/2 teaspoon pure vanilla extract
  • Pinch of sea salt

Optional Ingredients

  • 1 tablespoon coconut oil (for smoother texture)
  • Melted dark chocolate (for drizzle or coating)

Instructions

  1. Prep the Avocado Base: Cut the avocado in half, remove the pit, and scoop the flesh into a food processor or blender. Blend until completely smooth and creamy, scraping down the sides as needed to ensure no chunks remain.
  2. Add the Chocolate Ingredients: Add the melted dark chocolate, cacao powder, maple syrup, vanilla extract, and sea salt to the avocado mixture. Blend again until the mixture is silky and uniform. Taste and adjust sweetness if desired. If the texture is too thick, add the coconut oil or a splash of almond milk to loosen it slightly.
  3. Chill the Mixture: Transfer the truffle mixture to a bowl, cover, and refrigerate for 30 to 60 minutes. Chilling helps the mixture firm up, making it easier to roll into truffles.
  4. Roll into Truffles: Once the mixture is firm, use a tablespoon or small scoop to portion out each truffle. Roll the mixture between your palms to form smooth balls and place them on a parchment-lined tray.
  5. Finish the Truffles: Dust each truffle with cacao powder for a matte finish, or drizzle/dip them in additional melted dark chocolate for a glossy coating. Chill the finished truffles in the refrigerator for 10 to 15 minutes to fully set before serving.

Notes

  • Ensure the avocado is ripe but not brown for the best creamy texture and flavor.
  • Use dark chocolate with 70% cocoa or higher and no refined sugars for a healthier treat.
  • Adjust the sweetness with maple syrup according to your taste preferences.
  • You can add a tablespoon of coconut oil to make the mixture smoother and easier to roll.
  • Store the truffles in an airtight container in the refrigerator and consume within 4-5 days.
  • For a dairy-free option, use dark chocolate that is vegan and free of milk solids.
