Description

These Antipasto Skewers are a vibrant and flavorful Italian-inspired appetizer featuring a delightful combination of mozzarella, cherry tomatoes, marinated artichokes, olives, salami, roasted red peppers, and fresh basil. Perfectly drizzled with olive oil and optional balsamic glaze, they are an easy no-cook party platter that’s quick to assemble and ideal for entertaining.

Ingredients

Scale

Ingredients

  • 1 cup mozzarella balls (bocconcini)
  • 1 cup cherry tomatoes
  • 1/2 cup marinated artichoke hearts, quartered
  • 1/2 cup pitted olives (black or green)
  • 1/2 cup salami or pepperoni slices, folded
  • 1/2 cup roasted red peppers, chopped into chunks
  • 12–15 fresh basil leaves
  • 1–2 tablespoons olive oil
  • 1 tablespoon balsamic glaze (optional)
  • Salt and pepper to taste
  • 12–15 small wooden skewers or toothpicks

Instructions

  1. Assemble Skewers: On each skewer or toothpick, thread a combination of ingredients starting with a cherry tomato, followed by a folded salami slice, a chunk of roasted red pepper, one olive, a mozzarella ball, a piece of artichoke heart, and finish with a fresh basil leaf. Mix and match to create variety and appealing color.
  2. Arrange and Season: Lay out the completed skewers on a serving platter. Drizzle them lightly with olive oil and, if desired, balsamic glaze for an added sweet acidity. Season with a pinch of salt and freshly cracked black pepper to enhance the flavors.
  3. Serve or Chill: Serve immediately for fresh flavor or refrigerate covered for up to 4 hours before serving to chill and meld the tastes.

Notes

  • Perfect for parties, holidays, or easy entertaining.
  • Use store-bought marinated ingredients to save time.
  • For a vegetarian version, omit the meat or substitute with marinated mushrooms.
