Crab Cakes

- 1 tablespoon lemon juice

Slaw and Fire Sauce
- 1 cup shredded cabbage
- 1 ½ cups sour cream
- ½ cup sweet chili sauce
- ½ tablespoon hot sauce
- 2 teaspoons Old Bay seasoning
Egg Rolls and Finishing
- 12 egg roll wrappers
- 1 egg, for egg wash
- 1 tablespoon water, for egg wash
Instructions
- Make Crab Cakes: In a large bowl, combine lump crab meat, panko breadcrumbs, mayonnaise, Old Bay seasoning, coarse black pepper, coarse sea salt, lemon juice, chopped green onions, sriracha sauce, stone-ground mustard, and prepared horseradish. Mix thoroughly until ingredients are evenly incorporated, then form the mixture into small balls.
- Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for 5 minutes to ensure even cooking and a crispy exterior on the crab cakes.
- Air Fry Crab Cakes: Place the crab cake balls into the air fryer basket in a single layer. Cook for 10 minutes, or until the crab cakes are golden brown and cooked through, flipping if necessary for even browning.
- Make Fire Sauce and Slaw: While the crab cakes cook, whisk together sour cream, sweet chili sauce, hot sauce, and Old Bay seasoning in a bowl. Reserve ¾ cup of this mixture for dipping later. Toss the shredded cabbage with the remaining sauce to create a flavorful slaw.
- Assemble Egg Rolls: Cut each cooked crab cake in half. Lay an egg roll wrapper flat on a clean surface, spread approximately 2 tablespoons of the cabbage slaw down the center, then top with three crab cake halves. Fold the egg roll wrapper by folding the sides in and rolling tightly. Brush the seam with an egg wash made by beating 1 egg with 1 tablespoon of water to seal.
- Preheat Air Fryer for Egg Rolls: Preheat the air fryer again to 400°F (200°C) for 5 minutes and lightly grease the basket to prevent sticking.
- Air Fry Egg Rolls: Place assembled egg rolls in the air fryer basket in batches without overcrowding. Cook for 8-10 minutes, flipping halfway through, until the egg rolls are golden brown and crispy.
- Serve: Serve the hot, crispy egg rolls immediately with the reserved fire sauce on the side for dipping.
